Building on what we learnt from SFO, here’s our next ‘modern’ take on a WCIPA. Fermented with a couple of different yeast strains to achieve a balanced base on to which we loaded up some of our favourite west coast style hops. Huge low temp whirlpool additions of Idaho-7 then double dry-hopped with Chinook and Citra. This style is fast becoming a staff favourite.
