Paperbark is our first release in the area of mixed fermentation barrel aged sours and we’re incredibly proud to finally be able to share it with you.⁠

This beer was a long time in the making with its primary fermentation in stainless, secondary fermentation over 21 months in a single french oak barrel, followed by more time in stainless then a lengthy 8 month long bottle conditioning.⁠

As with any barrel aged beer, the process cannot be forced and the beer is ready when it's ready. The result is a complex golden sour with soft acidity and a delicate blend of funky character.⁠

Paperbark also has a very personal component to it. The artwork on the bottle was painted by Mike’s mother, Katrina, inspired by the view from her balcony in Scotts Head, NSW. In September 2022 Katrina was diagnosed with Glioblastoma (GBM), an aggressive form of brain cancer. ⁠

This month Erik & Mike will be raising money for the Mark Hughes Foundation and shaving their ‘manes’. The Mark Hughes Foundation is of particular significance to us as they are responsible for implementing Brain Cancer Care Coordinators in rural and regional NSW health districts. This directly and positively impacted Katrina's care in Northern NSW.⁠

Primary Ferment:⁠
Stainless steel with Saccharomyces cerevisiae, Lactobacillus brevis & Lachancea thermotolerans⁠

Secondary Ferment:⁠
21 months in a single French oak barrel with Brettanomyces claussenii & Pediococcus damnosus⁠

Bottled July 2023. Tertiary ferment in bottle.⁠
