Say hello to Isolate, brewed with the latest evolution of our house yeast strain – big thanks to Josh from @mogwaiculture for catchy name: PC7.1! We'd been having a few little hiccups with our original house yeast after taking it off ice last year, but without missing a beat, Josh swooped in, isolated a bunch of colonies, and picked the one that was just right for us. So far, it's performing like a champ! Throw in a thick, stable haze, plus the juicy combo of Peacharine and Motueka, and we think we've got a real winner on our hands!
